Xamarin.Forms release builds suddenly crashing on iOS device

We have a major product in Xamarin Forms (PCL) that we have been releasing Ad Hoc iterative builds to our client for months now. I have reason to believe there is something wrong with the environment (i.e. latest update of Visual Studio for Mac Community), as this has never happened before but now still persists even if we checkout old tags from previous builds that we know worked before. Here's what's happening:

Debug on iPhone Simulator --> Works
Debug on iOS device --> Works
Release on iPhone Simulator --> Works
Release on iOS device --> Crashes on splash screen

I can't make any discernible sense of the symbolicated crashlog (it seems the origin is framework level with mono/aot), but it can be found here: https://pastebin.com/1ckJHYCQ (one entry could not be symbolicated, even manually with atos, but I know it isn't the source code's fault so I'm not sure if it would've helped)

I have tried about every build variant I can think of (again, not something that I've had to do before nor has it been tampered with prior to now) and the build output is virtually identical (diffed between Debug and Release on iOS device). OSX 10.12.5
Visual Studio Community 2017 for Mac --> Version 7.0.1 (build 24)
Xamarin.Profiler --> Version 1.5.4
Xcode 8.3.2 (12175) Build 8E2002
Xamarin.iOS --> Version 10.10.0.36 (Visual Studio Community)

Could really use some help with this one! Is there a way to downgrade VS for Mac??
